Please   Note: Student Support Services will remain open up until Friday 28th   December (excluding public holidays) for online enrolments and online   student support.

As  work will be undertaken on our Student  Management System and Learning  Management System over the Christmas break, we cannot process online  enrolments after 28th December 2018.

Online enrolments and student support services will recommence on Monday 21st January 2019.

The need to nominate or employ suitably qualified Food Safety Supervisors in food businesses is a legislative requirement in Victoria, New South Wales and Queensland, however specific food safety supervisor requirements vary from state to state in relation to which food sectors / businesses must have Food Safety Supervisors.

Our course covers:

Level 1
  • Personal health & hygiene of food handlers
  • Food contamination - hazard types and sources
  • High risk foods & the danger zone
  • Preventing food contamination & bacterial growth
  • Safe food handling techniques & procedures from receipt of incoming goods, storage, and preparation through to food service
  • Correct use of probe thermometers and calibration
  • Correct cleaning & sanitising procedures
  • Food Safety Programs - record keeping requirements
  • What if something does go wrong? - reporting & corrective action

  • Food Safety Supervisor responsibilities & the law
  • Risk and Compliance Management
  • Food Safety Programs - program types & structure
  • HACCP principles
  • Support Programs (cleaning, pest control, equipment & kitchen maintenance, calibration etc)
  • Records & Logsheets
  • Audits & council inspections
  • Customer complaints and food recall
  • Supervising & training of food handlers
